This beautifully succulent Cajun chicken dish was the mastermind of the ever-talented Sarah Ingham from the Ingham Family Limited.
Ingredients
4-5 Large potatoes
200g Diced Chicken
50ml Double Cream
Salt, Pepper, Paprika, Garlic, Tomato Puree
175g Grated Cheese
Method
1. Chop potatoes into squares.
2. Spray fry-light oil into air fryer, bung potatoes in, pour over some olive oil, season with salt, pepper, paprika and crushed garlic. Pop on for approximately 20-25 mins at 180 degrees.
3. Fry diced chicken, add Cajun chicken spice, add spices to taste.
4. When chicken is cooked through, add some tomatoe puree and double cream. Mix into the chicken dish and heat.
5. Add potatoes and mix in.
6. Sprinkle generous helpings of grated cheese on top and heat until it melts.
